In a process for the preparation of feed potato flakes, a pretreated potato composition is dried by means of a roller drier. A potato composition which contains peel is homogenised and rendered pumpable by means of a disintegrator before it is applied to the drying roller, during which process it is worked in such a way that the maximum size of the potato peel shreds has a surface area of up to 4 mm<2> and an additional mechanical breaking-up of the starch-containing cell is achieved. The disintegrated, worked composition is either applied directly to the drying roller in order to be dried or, if it contains protein, it is first subjected to an acidification process to coagulate the protein and then applied to the drying roller. |
