摘要 PURPOSE:To prepare a food having extremely fine filamentous texture similar to the crab leg meat, scallops, etc., efficiently, by passing a thin raw material sheet successively through a pair of vertically arranged roller cutters having different circumferential speed from each other. CONSTITUTION:A thin raw material sheet 1a is inserted between the upper cutter rolls 4, 4 each having a number of circumferential grooves 5, 5, and slit to obtain thin strips 1b, which are then inserted between the lower cutter rolls 8, 8 having a circumferential speed of higher than that of the lower roll 4 and having a larger number of circumferential grooves 9, 9 and processed to a filamentous material 1c. A food having finer filamentous texture can be prepared by arranging a number of cutting rolls in series, and passing the raw material sheet successively through the cutter rolls.
