PURPOSE:To prepare frozen potatoes with their skin capable of providing baked potatoes like baked potatoes immediately after baking, by thawing, obtained by baking potatoes with the skin by hot air or cooking them by microwave, followed by freezing them. CONSTITUTION:Raw potatoes with the skin are baked at about 150-250 deg.C by hot air for about 15-20min in such a way that scorching will not take place and only the surface parts are baked, the potatoes are steamed at about 95- 100 deg.C atmosphere temperature for 35-45min, and frozen, or the raw potatoes with the skin are cooked by microwave by an electronic oven with 2,450MHz for about 10-20min and frozen. |
