发明名称 PREPARATION OF INSTANT MISO SOUP
摘要 PURPOSE:Ingredients for MISO (soybean paste) soup are heat treated, formed into a plate, frozen, cut into pieces of a desired size and placed in cups and MISO soup is poured into these cups, then they are freeze-dried to give the titled MISO soup of good quality practically in low costs. CONSTITUTION:Ingredients for MISO soup such as stone parsley, taro, raddish, TOFU (soybean curd), fish or sea weeds are individually or simultaneously heat treated, mixed together uniformly, made into a plate, then frozen. The frozen product is cut into pieces of desired size and shapes and placed into cups made of aluminum foil, foamed polystyrene, ceramics or plastics. In the meantime, MISO soup is prepared in a customary manner by flavoring with dried bonito or dried small sardines and poured into the above cups. They are rapidly frozen to -30--70 deg.C, heated in vacuum to effect dehydrative drying. The product is packed to give the objective instant MISO soup with ingredients.
