<p>A framework with an open perforated bottom has an internally projecting rim which retains the sliding bottom of the mould, and is provided with feet which normally support it in the sepg. tank, but which may when in register with a number of openings in the rim pass through and push the perforated bottom upwards to compress the cheese with a pressure determined by the wt. of the framework. Where the mould has a sliding cover means are provided for fixing it in the framework before pressing e.g., by a triangular element which fits in recess in the framework. Pref. means are also provided for guiding the rotation of the mould within the sepg. tank.</p> |
