PURPOSE:Rice is heated together with water into glue, which is dried into a powder, thus producing roux giving constant viscosity and good taste easily, even when made for the first time. CONSTITUTION:After polished rice is classified and washed with water, it is heated together with water to convert the starch into alpha-form completely. Heating rice is effected by boiling rice dipped in water or by evaporating off the water contained in rice after immersion of rice in water for a prescribed time to impregnate rice with a sufficient amount of water. Then, the glued rice is dried and made into a powder to give the objective roux. The drying is effected spontaneously or forcibly with a dryer and further the glued rice is rapidly frozen and simultaneously placed in vacuum to evaporate water to effect drying without any change in rice properties. The powdered roux may be used directly, however, it is solidified and formed in a desired shape for use. |
