PURPOSE:To prepared green and fastened udon, by sprinkling slaked lime on funori (a glue plant), rubbing and washing it in water, adding it to hat water so that it is boiled to jummy paste state, followed by blending it with wheat flour. CONSTITUTION:Slaked lime is sprinkled on funori which is washed in water so that its harshness is removed fully and sands, dust, etc. are eliminated, and coloring funori is improved. The funori is boiled to jummy state by a low fire with stirring for a long time, and it is cooled and set. 10-40wt% funori is added to wheat flour and kneaded with dilute salt water which is fed slowly. The prepared paste is processed into udon. |
