PURPOSE:While the raw materials for noodle is kept alkaline, alcohol is mixed therewith to propoduce raw noodle of high elasticity, good texture and high storability. CONSTITUTION:An alkali such as carbonate or bicarbonate salt is added to raw materials for making noodle to keep the pH higher than 9 and ethanol is added thereto. Ethanol may be added at the same time when the alkali is added. When raw wheat noodle or raw buckwheat noodle is made, 1.5% of alkali and 3% of ethanol are added based on the raw materials. |
