PURPOSE:To improve the utility value of the meat and bone of the bony part of fish as food or nutrient, by adding water to the solid part of heat-treated bony part of fish, separating the bone and meat by impact, etc., and separating both components completely taking advantage of the density difference. CONSTITUTION:Bone of fish having residual meat and/or bony part of fish is boiled or steamed by conventional process, and the soild part is separated and recovered. The meat attached to the bone is separated completely from the bone, either by adding water thereto and stirring or lightly grinding with a mixer, or, without addition of water, stirring with high-pressure water-jet or high-pressure air blast. The meat is separated completely from the bone taking advantage of the density difference between the meat and the bone, by washing out the meat and/or leaving the mixture at rest with or without dilution, or by centrifugal separation. The separated bone and meat are refined, if necessary. |
