<p>PURPOSE:To cool the object material evenly in a short time, and to prevent the lowering of freshness due to the insufficient moisture, by applying a micromist evenly to the surface of the material primarily evacuated, and by evacuating the material secondarily to a high degree of vacuum. CONSTITUTION:A perishable food, e.g. a vegetable, is placed in a vacuum tank, and primarily evacuated. Compressed air and cool water are then sprayed from a spray nozzle for producing a micromist by the air injection method onto the food while breaking the vacuum in the tank in a short time. The micromist is applied to the surface of the object food to be cooled evenly, and the food is evacuated secondarily to a high degree of vacuum to make the adhesive moisture evaporate in vacuo preferentially. Thus, the food is cooled evenly.</p> |
