PURPOSE:To prepare the titled TSUKUDANI (food boiled down in soy) having delicate taste, by reconstituting dried SHIITAKE mushroom, cutting and rolling the stalk of the mushroom, boiling in the presence of sodium bicarbonate, exposing to running water to obtain cut stalk of mushroom and boiling the cut stalk together with whole mushroom in soy. CONSTITUTION:Stalk 1 of dried SHIITAKE mushroom is reconstituted with water, sliced to obtain pieces of cut stalk 2, rolled, boiled in water containing sodium bicarbonate, exposed to running water to completely remove sodium bicarbonate and pressed to drain the water. The cut pieces of stalk 2 and whole mushroom 4 retaining the outer shape of the mushroom 3 are mixed and boiled in a seasoning such as soy, MIRIN (sweet rice wine used as seasoning), etc. |
