Pigment extn. from red grape mash - by sulphur di:oxide leaching in retention tank and mash press

The mash is treated with SO2 and passed through a press. The grape juice is subsequently desulphurised and the SO2 is recycled. Higher pigment yield is obtd. with reduced storage facilities. The grape juice produced is equally well suitable for a fermentation process or for soft drinks.
