PURPOSE:An oil-in-water type emulsion of 50wt% fat content or a fat powder made by spray drying of the emulsion is used to make rice cake having good handleability, good texture and high storability. CONSTITUTION:When rice cake or rice cake stuffed with bean jam or the like is prepared by usual methods, an oil-in-water type emulsion that has more than 50wt%, preferably more than 70wt% oil content and contains a soybean protein which is made by partial hydrolysis with an acid or protease, preferably its hydrolysis rate is 5-30%, when given as the solubility in 10% trichloroacetic acid solution, or its spray-dried powder is added by 1-5wt% calculated as oil. |
