The soya protein may be rendered heat coagulable by heating in solution or slurry at 80 to 140‹C for 1 sec. to 30 mins, and may be in the form of a protein isolate, a curd of acid-precipiated soya protein, or a protein concentrate. The dough may further contain up to 100 parts by wt. of oil or fat per 100 parts water, 1 to 10 parts of egg, and starch e.g. potato starch. The dough may be extruded in hollow tubular shape, or as a flat tape, and may be stuffed with food ingredients e.g. minced vegetables and meats before frying. Frying may be in deep fat in two stages, at 100 to 130‹C and then at 135 to 200 ‹C. The product may be heat sealed. |
