PURPOSE:To prepare a salad storable for a long term, by incorporating a salad made from a potato as a main raw material with glycine and an emulsifying agent, packing the resultant mixture in a heat-resistant container, and sterilizing the packaged mixture under heating. CONSTITUTION:In incorporating a boiled potato with another raw material for a salad, 0.1-5%, based on the product, glycine and 0.1-4% based on the product, emulsifying agent are incorporated with the raw materials. Sucrose ester or glycerol ester of a fatty acid or phospholipid, etc. alone or a mixture thereof is used as the emulsidying agent. Lactic acid, citric acid, etc. may be added to improve the flavor thereof. The resultant prepared salad is then packed in a heat-resistant container, sterilized under heating and then sealed up to give the aimed product. The sterilization is carried out at 90 deg.C or above for 5- 10min, and may be conducted after the packaging. |
