摘要 The present invention relates to a method for producing a colored rice yeast by using organic solvent extraction. More specifically, the present invention relate to a method for producing a colored rice yeast by using organic solvent extraction, a yeast produced through the method, and a colored rice fermented wine produced through the yeast. When a yeast is produced after fat-soluble components of colored rice are removed by using organic solvent extraction, an alcohol generating function and chrominance are remarkably improved compared to when yeast is produced without organic solvent extraction. Thus, the method for producing a colored rice yeast by using organic solvent extraction according to the present invention can produce a colored rice yeast having an excellent alcohol producing function and excellent chromaticity compared to a conventional method.
