PROBLEM TO BE SOLVED: To obtain the subject new derivative that comprises a specific dipeptide derivative, is obtained from a readily available α-alkylamino acid component and is useful as an active ingredient of a low-calorie sweetener having high stability, safety and sugar ratio. SOLUTION: This new derivative is a dipeptide of the formula [R1 is a 1-13C saturated or unsaturated, straight chain or cyclic hydrocarbon or their mixture or a saturated or unsaturated hydrocarbon bearing an aromatic substituent; n is 1, 2; R2 is methyl, ethyl; R3 is phenyl, benzyl, p-hydroxybenzyl; R4 is a 1-4C alkyl; the structure including the C<1> -position carbon is represented by (S), while the structure including C<2> position carbon is represented by (S), (R) or (RS)], typically N-3,3-dimethylbutyl-α-L-aspartyl-α-methyl-L-phenylalanine methyl ester. This novel dipeptide is a low-calorie sweetener having high stability, safety and is useful as an excellent degree light color tone and sweetness. This dipeptide is prepared by usual peptide synthesis process. |
