PROBLEM TO BE SOLVED: To provide an oil-and-fat absorbing/holding agent with an innovative composition for absorbing oil and fat scattered and bled during heat cooking in a heat cooking appliance for fish and meat. SOLUTION: Instead of water which is conventionally used as an oil and fat adsorbent, this oil-and-fat absorbing/holding agent 3, which is made of granulated bentonite, is spread in the bottom of a tray 2 under a grill on which fish 1 is set for heating and cooking and a metal net 4 is laid above the agent at 10-30 mm gap. The granular oil-and-fat absorbing/holding agent 3 is bentonite containing montmorillonite as a main component and pulverized or granulated so as to have 1-7 mm particle diameter, is provided with excellent swelling property (absorptivity) and deodorization capability, and is capable of quickly absorbing and holding oil and fat scattered and bled from the fish 1 being heated. |
