PROBLEM TO BE SOLVED: To provide an apparatus for producing frozen dessert designed so as to make a fail-safe time adequately work when controlling terminal temperature to realize smooth production of the frozen dessert. SOLUTION: The apparatus for producing frozen dessert is provided with a cooling cylinder 8 cooling a mix while stirring it to produce the frozen dessert. A control device performs terminal temperature control stopping the cooldown of the cylinder due to the cooling device based on a prescribed temperature drop rate of the mix in the cooling cylinder 8 under the condition that the temperature of the mix in the cooling cylinder 8 detected by the cylinder sensor is less than a prescribed temperature for starting the control. The control device has a function of forcedly stopping cooling by the cooling cylinder when the cooling cylinder continues to be cooled for a prescribed fail-safe time, and changes the fail-safe time in accordance with the temperature of the cooling cylinder when starting cooling.
