摘要 Process for salting portions of meat comprises placing pieces (1) of meat in a vessel containing brine (3) for a given interval, to absorb salts from solution; and moving the pieces (1) relative to one another, so that all pieces (1) have their surfaces completely surrounded by the brine (3) for a set part of the dwell time in the bath, and the brine (3) is repeatedly set in motion during the treatment. Also claimed is the equipment required, comprising a vessel and an agitator unit (4) with a plunger (5) which moves both meat and liquid. The plunger is raised and lowered into the vessel, and pushes down some the meat at the top into the brine (3).
