The present invention relates to a method for making fruit ice-cream, which comprises preparing a raw fruit material, in particular acceptance, sorting, washing, cleaning, chopping and blanching, preparing and mixing prescribed components, pasteurizing, cooling, preserving and freezing the mixture, prepacking, hardening, packing and preserving. Prior to mixing the prescribed components the chopped and blanched raw material is acidified with edible citric acid up to pH 2.7-3.3, puree is obtained, it is heated up to a temperature of 80-85 °C and kept in the course of 20-25 min, homogenized, cooled and mixed with a sugar syrup preliminary pasteurized and cooled. |
