The present invention relates to a beef jerky preparation method and beef jerky. The method includes: a step in which source meat is sliced into a thickness of 6 to 10 mm; a step in which the sliced source meat is trimmed; a step in which blood stain is removed from the trimmed source meat; a step in which a seasoning liquid is prepared by mixing of soy sauce, sugar, pepper, cooking wine, vegetable water, and red pepper seed; a step in which the seasoning liquid is applied to the blood stain-removed source meat; a step in which the seasoning liquid-applied source meat is kneaded so that the seasoning liquid permeates the source meat; and a step in which the source meat permeated by the seasoning liquid is dried. According to the present invention, the beef jerky can be given an extended shelf life even without a chemical additive being used, beef jerky smell can be removed, a spicy taste can be added, the beef jerky can be given a better flavor, and peoples preference for the beef jerky can be improved. In addition, a quantity of vitamin C and capsaicin contained in the red pepper seed as well as protein can be taken in by means of beef jerky intake alone, and thus the present invention is capable of contributing to intakers health. Furthermore, the present invention facilitates intake of the red pepper seed, which is not easy due to a low level of availability despite lots of nutritional elements contained in it. |
