PRODUCTION OF SAKE YEAST MONOPLOID STRAIN

PURPOSE:To simply produce a monoploid strain of SAKE (Japanese rice wine) yeast with a high frequency. CONSTITUTION:The method for producing a monoploid strain of SAKE yeast is to select the monoploid strain from a mixture of a diploid strain of SAKE yeast with the monoploid strain thereof using a coloring matter culture medium. The strains are preferably treated with an alcohol in a step for separating spores as a former step in the method for production and/or a KOJI juice culture medium is preferably used in a step for sporulation as the former step. The KOJI juice culture medium is used as a proliferation culture medium in the method for producing the monoploid strain of the SAKE yeast including the step for sporulation in which the culture is carried out in the sporulating culture medium after culturing in the proliferation culture medium.
