PURPOSE: Provided is a method of sugar free candy having clearness two colors and tastes, therefore the candy causes no chemical reaction of sugar in the oral cavity, thus protect teeth from being decayed. CONSTITUTION: The method comprises the steps of: dissolving maltose at 110-120 deg.C; vacuum concentrating it to below 2.5% of water content at 180-185 deg.C under 9-10kgF/cm¬2 of steam pressure and 800-900nmmHg of vacuum pressure; adding natural spices, acidulant, vitamin, natural food color thereto and mixing them at 170-175 deg.c; aging the mixture at 170-175 deg.C in an S-shaped pipe and vacuum concentrating it; and filling the concentrate into a filling mold then molding it at 170-175 deg.C.
