FIELD: food-processing industry. SUBSTANCE: apparatus has casing of rectangular section extending in helical line, charging and discharge hoppers, steam pipeline, moisteners, and drive. Casing is divided by means of partition walls into set of moistening and cooking chambers arranged in alternation. Said chambers have sections with perforated bottom, which are positioned in guides for moving on front long rollers and rear short rollers. Cooking chamber is additionally equipped with high-pressure steam pipe. Adapter is positioned between charging hopper and discharge hopper so as to define in conjunction with casing closed contour. Strip-type device positioned inside adapter is adapted for lifting said sections. Lower strip of guides is provided with slot positioned in front of discharge hopper and adapted for passage of short rollers. Apparatus is used for heat-and- moisture treatment of bulk food products, in particular, for producing cooked groats and vegetables. EFFECT: improved quality of ready product, increased efficiency by expedient use of hydrodynamic process of product treatment and by elimination of intermediate transportation operations, and simplified and compact construction. 4 dwg |
