<p>In a series of successive operations the shoulder bone is first removed, the backbone cut for the whole of its length, the collar bond removed and the ribs detached. The machine comprises a vertical, open structure inside which the quarter is suspended, clamped and located by fluid power cylinders, while a splitting blade actuated by a fluid power cylinder extracts the shoulder. The quarter is released, laid flat and steadied by fluid powered members and conveyed across a backbone rotary cutter. Vertical descent of a blade actuated by a fluid power cylinder cuts out the collar bone. The ribs are cut and then milled by advancing the quarter under pressure across a controa-rotating square section cutter with sharpened corners.
