摘要 Mfr. of textured proteins comprises dispersing soya flour, powder or flakes having granulometry 40-400 mu m and an acidifying agent in water at 10-30 degrees C to obtain a mixt. having dry matter content 33-40%, pH 4.8-5.7 and viscosity 5000-12000 mPas; subjecting the mixt. to treatment by steam injection for 5-60s at 120-150 degrees C to form textured pieces and ejecting them, via an ejection nozzle, in the form of distinct pieces; agglomerating the ejected pieces by impact on a deflecting surface which intercepts them so as to form a sausage of agglomerated pieces; shaping and/or cutting the sausage; and drying the prod.
