1399650 Agglomerated food powders; instant coffee preparations D E J INTERNATIONAL RESEARCH CO NV 20 Dec 1972 [20 Dec 1971 30 June 1972] 58713/72 Headings A2B and A2E An instant agglomerated foodstuff comprises primary particles connected by solid "bridges" in which are embedded aroma and/or flavour enriched droplets of an edible oil, and is made by homogenously distributing the oil through the foodstuff while the primary particles are being fused together to form the agglomerates. As an example, instant coffee is prepared by agglomerating particles of spray dried coffee extract using an emulsion of water and coffee oil in which has been dissolved aromatic and/ or flavouring substances previously extracted from the coffee. The aromatic and/or flavouring substances can be extracted from the coffee by steam distillation or by solvents such as liquid CO 2 or fluorine compounds, and dissolved in the oil while the remainder of the coffee is made into a spray dried extract. The aromatic and/or flavouring substances are dissolved in the oil which is emulsified with an aqueous 20-30% coffee solution. The emulsion is then used to agglomerate the spray dried particles, which are then dried by fluidised bed or vacuum. A coffee substitute such as chicory may be incorporated. |
