L 7238 (R) The present invention is concerned with edible fatcontaining products comprising from 5% to 70%, calculated by weight of the total amount of fat, of hardstock indigestible polyol fatty acid polyesters, wherein the product consists of an oil-in-water-in-oil emulsion comprising an internal dispersed fat phase and an external continuous fat phase, the combined polyol fatty acid polyesters present in the internal oil phase having a slip melting point above 36.degree.C and the combined polyol fatty acid polyesters present in the external fat phase having a slip melting point below 36.degree.C. The present invention enables the inclusion of a substantial amount of high melting polyol fatty acid polyester in such a manner that the disadvantages normally resulting therefrom are essentially largely overcome.
