PURPOSE: A capsulated Lactobacillus fermentum YL-3 is provided, thereby improving acid survival and cool storage of Lactobacillus fermentum YL-3. CONSTITUTION: The capsulated Lactobacillus fermentum YL-3 is produced by mixing Lactobacillus fermentum YL-3 with 4% sodium alginate, wherein the capsulated Lactobacillus fermentum YL-3 may further coated with 1% chitosan; and the chitosan coated capsulated Lactobacillus fermentum YL-3 may be further added by 3% zeolite. The method for producing the alginate-capsulated Lactobacillus fermentum YL-3 comprises the steps of: inoculating Lactobacillus fermentum YL-3 to MRS broth containing 0.1% CaCO3 and culturing it at 42 deg. C 20 hours; centrifuging the cultured medium to obtain a cell pellet; washing the cell pellet with a saline buffer; mixing the cell pellet, 4% sodium alginate and a preserving agent containing 2.5% MSG, 3% ascorbic acid, 2.5% mannitol and 0.01% tween 20 in the ratio of 1:1:2; dropping a droplet of the alginate mixture into a calcium chloride solution; and recovering the capsulated Lactobacillus fermentum YL-3 with a sieve.
