FIELD: fish industry, in particular, eviscerating of salmons. SUBSTANCE: method involves separating rectum in zone adjoining anal orifice by initially holding it with the use of member inserted into anal orifice; bringing apart side and spinal bonds between rectum and abdominal cavity walls; removing interiors by sucking. Apparatus has conveyor with feeding trough for placing fish with back part oriented downward, measuring instrument for obtaining data on each fish, and dressing unit. EFFECT: improved appearance of product owing to elimination of traces of blood and casing contents and preventing abdominal cavity walls from damage. 25 cl, 17 dwg |
