1446929 Flavouring: sucrose composition GENERAL FOODS CORP 16 Nov 1973 [2 July 1973 24 Sept 1973] 53439/73 Heading A2B A sucrose-fixed acetaldehyde composition is produced by mixing paraldehyde with a supersaturated aqueous sucrose solution, crystallising at such temperature and at such a rate that the paraldehyde is rapidly depolymerised to acetaldehyde which becomes fixed in the sucrose crystals at less than 0.5% by weight of the crystal,. and drying the sucrose fixed acetaldehyde. The supersaturated sucrose solution may contain from 88% to 93% sucrose. Any acetaldehyde released to the air during crystallisation may be condensed and recycled to the supersaturated solution. Drying may take place at from 60‹C to 140‹C. |
