PURPOSE:To prepare oolong tea having excellent flavor, taste and color, in a short time in high efficiency, by granulating wet tea leaves, withering the granules and drying the product. CONSTITUTION:Raw leaves of tea are washed with water in a washing tank 1, centrifuged and dehydrated by a dehydrator 2, charged into a 1st withering apparatus 3 to evaporate preferably 10-20wt% water, transferred to a grinding and kneading apparatus 4, subjected to stirring, rolling, mixing, etc., to obtain wet tea leaves and crushed and cut to preferably <=5mm cube. The cut leaves are charged into a granulator 5, granulated to granules of preferably 5-10mm in diameter, transferred to a 2nd withering apparatus 6 to effect the fermentation of the surrounding part of the tea leaves and finally dried in a drier 7 to obtain the objective oolong tea having a water-content of preferably about 8%.
