PURPOSE:To provide a delicious washed and dried rice cookable without washing and immersing in water, free from crack, having excellent preservability and effective in avoiding the formation of soft-skin hard-core cooked rice even by cooking without pretreatment. CONSTITUTION:Polished rice is washed with water to remove the bran to an extent to cause little clouding of water by stirring the washed rice in water. The washed rice is drained to afford the objective washed and dried rice free from crack, cookable without immersing in water and having a water-content of 16-19%. |
