Hardened casein, especially such as has been polished by treatment with a hypochlorite solution followed by drying, is dyed by treatment in a solution of a dyestuff of the monoazo or anthraquinone series carrying an alkylsulphuric ester group attached to an aromatic nucleus through O or N but free from sulphonic or carboxylic acid groups attached directly to an aromatic nucleus. In examples, (1) casein buttons are dyed a deep, level scarlet by treatment for 10 minutes in an aqueous solution at 70 DEG C. containing formic acid and the dyestuff, 4-nitraniline --> the sulphuric acid ester of N-ethyl-N-b -hydroxyethylaniline; (2) casein buttons, treated with hypochlorite, are similarly dyed a bright, level yellow with the dyestuff, the sulphuric acid ester of p-aminophenyl-b -hydroxyethyl ether --> p-cresol; (3) thin casein slabs are dyed a deep level blue by treatment for 10 minutes in an p aqueous solution at 70 DEG C., containing formic acid and, as dyestuff, the sodium salt of the sulphuric acid ester of 1-methylamino - 4 - b - hydroxyethylaminoanthraquinone.
