PROBLEM TO BE SOLVED: To provide an industrial method for manufacturing a portioned soft cheese with a surface matured with mold, in addition with a flavor substance, which can be cut into portions after addition of the flavor substance and then subjected to maturation and subsequent heat sterilization without problems in cutting into portions, causing no leakage of the cheese or the flavor substance from packaging material in heat sterilization, without losing shape.SOLUTION: The industrial method for manufacturing a portioned soft cheese with a surface matured with mold, in addition with a flavor substance, includes the steps of: cutting a cheese curd having white mold grown in the primary maturation and adding a flavor substance on the cross section; bonding the cheese pieces obtained by the cutting so as to restore the original shape; and cutting the cheese curd having the restored shape into portions by a machine without losing the shape and peeling of the cheese at the part having the flavor substance added, and mechanically transporting each of the portions. |
