摘要 The present invention relates to a method for preparing a red snow crab dumpling using an enzyme hydrolysate of devil′s tongue jelly (glucomannan). In particular, the present invention relates to a method of preparing a calcium enriched red snow crab dumpling using devil′s tongue jelly and a red snow crab dumpling prepared by using the said method, by which a substitute material of enzyme hydrolysate containing powder or liquid of the devil′s tongue jelly (glucomannan) is developed without using a flour dumpling skin and simultaneously safety and preservability of a product are improved; and calciumhydroxide which is an alkaline coagulating agent required for the gelantized and swollen colloid solution of the devil′s tongue jelly powder (or devil′s tongue jelly liquid) is substituted with water soluble nano calcium acetate having a particle size of 600 nm after an edible oyster shell is fermented together with acetate (CH_3COOH), thereby removing the devil′s tongue jelly′s own smell to improve texture and taste of food, improving the viscosity and elasticity of the colloid solution, allowing solidification to be rapidly finished, enriching calcium in food, and improving absorption rate of the food in a body to enable enough calcium to be ingested without the help of an additional vitamin D_3.
