The present invention relates to an apparatus for processing gizzard of poultry, which can hygienically process the gizzard into gizzard processed products using mechanical devices. The present invention provides a gizzard processing apparatus for eliminating endothelium from the gizzard extracted from internal organs of poultry, which puts the gizzard between upward guide rods installed on a rotating bottom surface and feeds the gizzard by forming a feeding belt chain by central rotating shafts at both ends; cuts the central portion of the gizzard to 3/4 depth with a rotating cutter while feeding the gizzard; unfolds the cut gizzard endothelium upwards by a guide unit and cleans the unfolded gizzard endothelium by high pressure water and high pressure air; and lets a guide perform guidance to rotate the cleaned gizzard, having reached one end of the feeding belt chain along the guide unit, by 180 degrees, to rotate the gizzard endothelium downwards, to guide the gizzard endothelium to the upper part of helical gears engaged with each other while having a mutually compatible structure, and to make protrusions of the helical gears hold and rotate the gizzard endothelium for clearly separating the gizzard from the endothelium. |
