PURPOSE:To carry out modification of a phospholipid useful for e.g., drugs by acting, in a system comprising both organic aqueous phases, on a substrate i.e., a combination of the phospholipid with a fatty acid an enzyme capable of fatty acid ester interchange for the phospholipid to perform ester interchange to effect regulation of the melting point or fluidity of said phospholipid. CONSTITUTION:An enzyme (e.g., lipase) capable of fatty acid ester interchange for a phospholipid is acted, in a system comprising an organic solvent phase (e.g., n-hexane) and aqueous phase at a volume ratio (1:9)-(9:1), on a substrate, i.e., a combination of a phospholipid (e.g., phosphorylcholine) with a fatty acid (e.g., oleic acid) or fatty acid lower alcohol ester (e.g., dipalmitoyl- phosphatidylcholine) to carry out fatty acid ester interchange for the phospholipid, thus modifying the phospholipid. It is preferable that said enzyme be derived from microorganisms classified as Aspergillus sp. or Rhizopus sp. |
