Provided is a poultry processing apparatus for removing two legs from a sirloin obtained from a dead body of poultry. The sirloin includes a back portion of the poultry and two legs connected to the back portion. The apparatus includes: a suspension conveyer for transferring the sirloin connected to the legs in a transfer direction; a surface conveyer which is joined to the back portion of the sirloin and transfers the pack portion; one or more upper guide rails which actually follow at least a portion of an outer circumferential side of the surface conveyer separated from the suspension conveyer; and one or more guides which are formed to accommodate the back portion of the sirloin, as a gap is formed between the surface conveyer and one or more upper guide rails, and are arranged close to the surface conveyer to support the back portion of the sirloin while the back portion is transferred by the surface conveyer.
