PROBLEM TO BE SOLVED: To provide a physical quantity estimation apparatus configured to estimate stress characteristics of a porous medium more accurately than the case of estimating stress characteristics of the porous medium with an existing estimation method, an image forming apparatus, and a program.SOLUTION: A derivation section 30A derives dehumidifying pressure, which is a pressure of dehumidification in a structure with cavities of a porous medium, on the basis of information on correlation between a temperature of the porous medium and the content of liquid in the porous medium. An output section 30B outputs physical quantity indicating stress characteristics of the porous medium derived on the basis of a result of comparing vapor pressure in the cavities with estimated dehumidifying pressure derived by the derivation section 30A.
