The present invention relates to a functional soybean paste and soy sauce having an anticancer effect by using an Orostachys fimbriatus extract and to a method for manufacturing thereof. The method comprises the following steps of: manufacturing a hot-water extract of the Orostachys fimbriatus; boiling soybeans with the hot-water extract of the Orostachys fimbriatus, shaping the soybeans by pressing the same; manufacturing Orostachys fimbriatus fermented soybean lump by fermenting and drying the same; adding and mixing solar salt in the hot-water extract of the Orostachys fimbriatus; manufacturing Orostachys fimbriatus soy sauce with a liquid fermented composition by concentrating the liquid composition from the Orostachys fimbriatus fermented soybean lump after maturing the Orostachys fimbriatus fermented soybean lump at low temperature; manufacturing the Orostachys fimbriatus fermented soybean lump by placing the same in a container, and maturing the same at low temperature. According to a result of sensory test and anticancer activity of the Orostachys fimbriatus fermented soybean lump and the Orostachys fimbriatus soy sauce, the Orostachys fimbriatus fermented soybean lump and the Orostachys fimbriatus soy sauce have excellent anticancer functionality, and improved values in nutritional, functional, quality, and preference aspects by having enhanced color, texture, functionality. Additionally, the present invention has an effect of maximizing the use of Orostachys fimbriatus. |
