The present invention relates to a method for producing a hydrolyzed soup stock using a pollack byproduct. More specifically, the method comprises the following steps: mixing a pollack byproduct with cold water and leaving the same to extract blood in cold water; mixing the pollack byproduct, from which the blood is removed, with refined water and performing enzyme decomposition on the same into alkalase and protease M which are two protein enzymes and glutaminase; devitalizing the protein enzymes and glutaminase while pressing and extracting the same at high temperature; and filtering, concentrating, and powdering the pollack byproduct hydrolysate which is pressed and extracted at high temperature. By using a pollack byproduct, a soup stock having no bad taste and bad smells but good flavor can be provided. |
