FIELD: food industry.SUBSTANCE: invention relates to food industry, in particular, to bread bakery, to a method as well as to a device for small dough products (1) expression, cutting out or slitting. A small dough product (1) is put into a bowl (2) for treatment under pressure; then compressed air is supplied into the bowl (2) for a preset period of time for treatment under pressure while the small dough product (1) is loaded with compressed air so that the small dough product (1) is centred in the central position of the bowl (2) for treatment under pressure; then the small dough product (1) is expressed or cut out in such position.EFFECT: invention allows to quickly and reliably cut out or slit small dough products and to achieve an external typical and repeated result in bread products with crust breaking along the slit.23 cl, 8 dwg |
