<p>PROBLEM TO BE SOLVED: To provide a dried food material with a shape inherent to the material retained, having an inner structure with many fine pores, with a new texture which is brittle and easy to bite.SOLUTION: At least a catabolic enzyme and fat are contained inside a frozen and thawed food material, and the whole is dried by evaporation to manufacture the dried food material. The food material has porous structure, with a shape inherent to the material retained.</p> |
