<P>PROBLEM TO BE SOLVED: To provide molded potato chips reduced in an oil absorption amount by fry cooking and a method for producing the same. <P>SOLUTION: The molded potato chips contain a propylene glycol palmitic acid ester and/or propylene glycol oleic acid ester (1). A method for producing the molded potato chips includes a process for preparing molded potato chip dough by adding a propylene glycol palmitic acid ester and/or propylene glycol oleic acid ester to raw materials of the molded potato chips (for instance, a single or at least two kinds of dried potato powder, dried mashed potato and dried potato flake) (2). <P>COPYRIGHT: (C)2011,JPO&INPIT |
