PROBLEM TO BE SOLVED: To provide a method for improving the taste of salt of thiamines, which maintains or enhances the antibacterial effect of salt of thiamines useful as food additive material and eliminates or reduces the discomfort odor and flavor inherent to salt of thiamines; a method for manufacturing a food additive; and a food additives.SOLUTION: The method for improving the taste of salt of thiamines includes processing the salt of thiamines by smoking. By suppression of the discomfort odor and flavor inherent to salt of thiamines, the antibacterial effect of salt of thiamines can be further enhanced. The disclosed method for manufacturing a food additive includes the step of processing salt of thiamines by smoking. The produced food additive is useful, for example, in food manufacturing, cooking, and the like, in the field of foods. |
