The present invention provides a manufacturing method of soybean paste using germinated soybeans and Trichosanthes kirilowii, which comprises a step of preparing germinated soybean powder manufactured by pulverizing fermented soybean manufactured with germinated soybeans, and Trichosanthes kirilowii powder; a step of preparing a salting solution by mixing 40-50 weight% of liquor made by Lycium chinense Miller to 60-70 weight% of fermented liquid of Lysimachia christinae Hance with 25% of salinity; a step of manufacturing a seasoning kneading material by selecting at least one raw material among squash, radish, onion and glutinous barley; a mixing step of mixing 10-15 weight% of Trichosanthes kirilowii powder and 100-120 weight% of the salting solution to 100 weight% of prepared germinated soybean powder; a step of mixing 100-120 weight% of the seasoning kneading material, wherein the seasoning kneading material may be mixed when the germinated soybean powder, Trichosanthes kirilowii powder and the salting solution are mixed; a first aging step of firstly aging the mixture in the bare ground; and a second aging and fermentation step of secondly aging and fermenting the firstly aged mixture at a low temperature. |
