<p>PROBLEM TO BE SOLVED: To provide a fruit acidity reduction method that can reduce the acidity of fruit easily and quickly at low cost.SOLUTION: Fruit F is put in a constant-temperature bath A that contains hot water at a temperature of 46°C or more and 50°C or less, and is heated until the temperature of the whole fruit F becomes 46°C or more and 50°C or less. When the temperature of the whole fruit F becomes 46°C or more and 50°C or less, the fruit F is taken from the constant-temperature bath A, and the taken fruit F is left in a room at a temperature of more than 0°C and 15°C or less to cool the fruit F.</p> |
