The present invention provides a manufacturing method of granules of steamed and dried sweet pumpkin, which comprises a step of gelatinizing sweet pumpkin by steaming then drying; a step of powderizing the dried sweet pumpkin; a mixing step of mixing sweet pumpkin powder and 30-40 parts by weight of an excipient for granules with respect to the sweet pumpkin powder; and a step of manufacturing a granule formulation with the mixture. According to the present invention, the characteristic unpleasant taste and salty taste of sweet pumpkin are removed to reduce consumer repulsion, and an improvement of organoleptic property that increases the characteristic sweet taste of sweet pumpkin is made possible. Microbial stability can be obtained by the sterilizing action of a steaming process, thereby maintaining long-term stability despite changes in microorganisms, temperature and humidity. Accordingly, the manufacturing method of the present invention can be applied to convenience foods such as a porridge, soup, etc., and various foods such as beverage, tea, pastry, noodles, etc. |
